The Joint Seafood founder Liwei Liao opened this casual handroll counter inside Citizen’s Public Market to serve a parade of dry-aged fish wrapped in rice and seaweed. On the menu are handrolls filled with cuts of tuna, kanpachi, steelhead trout, and blue crab salad served a la carte or as lunch-sized omakase meals. Liao also has a full version of Uoichiba at his Sherman Oaks seafood market for anyone who’s located in the San Fernando Valley.
