Uoichiba (pronounced "oo-oh-ee-chee-bah") is the brainchild of world-renowned fishmonger Liwei Liao, aka Dry Aged Fish Guy.


Uoichiba is the Japanese term for "fish market" and is a casual handroll bar located within Joint Seafood, a specialty seafood market in Los Angeles.

At Uoichiba, handrolls are simple and individually handcrafted with the highest quality nori, shari, and dry aged fish.
